Ever wondered what’s in your vegetable oil? A new e-learning course developed by GrowNextGen Teacher Leader Andrea Harpen with assistance from Monsanto will help you understand the chemical structure of vegetable oil and introduce you to two soy-based vegetable oils and their benefits. Part of the course focuses on soy-based vegetable oils made using high-oleic soybean oil. Students will consider these questions:
- What is vegetable oil?
- What is the chemical structure of vegetable oil?
- How is the chemical structure of oil related to its functionality?
This course was developed for advanced chemistry students and encourages them to consider experiments they can conduct to test different oils for shelf life, reheating tolerance and stability.
